The Chukandar Rajgire ki Seekh, with beetroot and puffed amaranth, plays with texture and earthiness, while Kadam Muj, a kohlrabi galette, brings a delicate balance of flavour and freshness. The Galgal Paat Murg, infused with lemon leaves, and the soulful Chaulai Shikaar, a slow-cooked mutton curry with amaranth, bring warmth and depth to the table. Comfort finds form in the Chaunk Wali Arbi, with onion, coriander roots and jhakiya temper, and in Pathyud, tender rolls of besan and amaranth leaves that speak of home. From the bold Jwala Macchi to the elegant Muj Gaad, each dish feels familiar yet intriguing. The Bedu Roti, made with black lentils, ginger, and Himalayan garlic, ties it all together, while the Him-Paat, an in-house churned chikoo ice cream, leaves a lingering note of freshness, a gentle reminder that at Loya, comfort is rediscovered through flavour.

To complement this new culinary chapter, LOYA also introduces Vriksh, an innovative new cocktail menu inspired by the natural journey of a tree from root to fruit. Drawing from India’s rich botanical heritage, the menu explores five distinct stages; root/fungi, flower, seed, leaf, and fruit, each reflected through carefully chosen ingredients such as truffle, saffron, cilantro, ginger, and betel leaf. The result is a soulful, nature-led cocktail experience that captures both the abundance of the land and the artistry of modern mixology.
