FITOUR: An Immersive 14 seat Culinary Journey Through Indian Flavours, Sound and Design opens in Bandra

An immersive dining experience where Indian cuisine, storytelling, sound, light and design come together

Mumbai, 06th October, 2026: Some dining experiences are defined by a dish. Others stay with you for the world they create around it.

Opened in Bandra West on 4th October 2026, FITOUR, the latest concept from Aspect Hospitality, the hospitality vertical of Aspect Global, presents Indian cuisine through a deeply immersive lens. Limited to just 14 seats, FITOUR brings together culinary craft, memory, sound, light and design to create an experience that unfolds beyond the plate.

At FITOUR, dining is conceived as a journey through chapters, with each course revealing a different facet of Indian cuisine and the memories, places and traditions that inform it. Familiar flavours and ingredients are approached through contemporary techniques, creating an interplay between recognition and discovery. Carefully considered wine, cocktail and mixed pairings accompany the menu, designed to complement and heighten the character of each course.

The experience unfolds gradually with every element playing a role. A fragrance, a soundscape, a shift in lighting or a particular texture becomes part of the narrative, allowing each chapter to transition naturally into the next. Rather than simply presenting a menu, FITOUR creates an environment in which the story of the food can unfold.

The same philosophy extends into the space. Conceived as an extension of the culinary experience, the interiors combine handmade terracotta tiles, natural woven fibres, rich textures and muted landscapes, creating an intimate space that is understated yet richly tactile.

A defining feature is the Nostalgia Wall, where photographs, handwritten recipes, childhood memories and custom abstract artworks come together to offer a glimpse into the personal and cultural references behind the experience. Across the space, jars of pickles and ferments, alongside hand-blended spices, reveal elements of the culinary process that would traditionally remain within the kitchen. These details are not merely decorative; they form part of the story guests encounter as they move through FITOUR.

Commenting on the launch Hitesh Keswani, Managing Director & CEO, Aspect Hospitality says, “FITOUR represents our vision of creating hospitality experiences that go beyond the conventional dining format. The concept brings together food, storytelling, design and sensory elements to create a distinctive and intimate experience for guests. Chef Ashwin’s culinary perspective has been central to shaping FITOUR, and we are pleased to introduce a concept that reflects both his journey and Aspect Hospitality’s approach to creating experiences with a strong point of view.”

“FITOUR is a reflection of my journey with Indian cuisine and the experiences that have shaped my approach to food. The menu draws from memories, places, ingredients and techniques that have stayed with me over the years, while presenting them through a contemporary lens. I wanted to create an experience that extends beyond the food itself, with every element—from the flavours and pairings to the sound, lighting and design—contributing to the overall narrative”- Chef Ashwin Singh, Chef at FITOUR

With only 14 seats per service and one seating, FITOUR is designed around intimacy and attention to detail. The format allows guests to experience the meal at its intended pace, with each element given space to resonate. The Tasting Menu is priced at ₹8,245 plus taxes. Guests can also choose to pair their meal with cocktails for an additional ₹5,495, International Wine Pairing for an additional ₹6,495, or Indian Wine Pairing for an additional ₹5,145, all plus taxes.

For Aspect Hospitality, FITOUR marks an exploration of a more intimate and experiential expression of Indian dining; one where culinary craft meets memory, atmosphere and design.

From 4th October 2026, FITOUR will welcome guests in Bandra West to experience Indian cuisine through a setting where every detail has been thoughtfully considered, and every course forms part of a larger narrative.
