Behind this momentous takeover is a powerhouse duo—Angelo Immorlano, Bars Manager at Nobu Dubai and a leading figure in Dubai’s mixology scene; Shaaz, Head Bartender at Nobu Dubai and one of the Middle East’s most dynamic new voices in hospitality With over 19 years of experience, Angelo has honed his craft at globally acclaimed Japanese fusion establishments such as Roka London, Zuma London, and Zuma Dubai—ranked 17th on the World’s 50 Best Bars list—redefining Nobu Dubai’s beverage programme with a philosophy rooted in balance and harmony. Shaaz, born in Bangladesh and trained in India, brings over seven years of cross-border bartending experience, shaping her cocktails through stories, cultures, and global influences. Recently named Bartender of the Year (Highly Commended) at the Icons of Whisky Middle East & Africa 2025 and World Class UAE 2025 – 2nd Place, she has become a force for innovation and representation in the industry.
