The legacy of the Qureshi’s dates back to 1870, when Abdul Munne Qureshi served as the royal Khansama for the Nawabs of Lucknow. This family tradition continued through his son, Abdul Samad Qureshi, maintaining the Dum Pukht cooking legacy across generations. Chef Gulam Nabi Qureshi, who continues to delve deeply into Awadhi cuisine. Belonging to the illustrious Qureshi family, Chef Husban Qureshi has imbibed culinary excellence and understanding that best delivers royal flavours and recipes that are an ode to India’s rich culture. The menu at Indian Durbar is a grand amalgamation of Rajputana, Bengali, Peshawari, Kashmiri, Patiala, Hyderabadi, Gupta, Awadhi and Delhi cuisine, each paving way for the evolution of a distinct and flavourful culinary tradition.

A few notable highlights definitely worth relishing include – Galouti Kabab – goat/lamb minced to a paste, which is further balanced with a secret blend of spices and cooked on griddle, Nalli Nihari – slow-cooked stew with bone-in mutton pieces. The marrow leaves the bones and is mixed with the gravy, giving the stew a rich flavour, Purane Chowk ka Ghutwa Khumb – delicate kebabs made of minced mushroom, Lagan ka Murgh – chicken slow cooked in cashew and poppy seeds gravy and Awadhi Gosht Biryani – cooked dum style, the meat and rice are layered together cooked in rich flavourful ingredients.
