March 12, 2026: Recognising the importance of preserving India’s rich culinary heritage, Novotel Vijayawada Varun has embarked on a distinctive initiative to revive and celebrate forgotten regional cuisines. Launched this March, the “Culinary Voices” campaign brings to the forefront delicacies that were once cherished household staples but are now rarely experienced in their most authentic form.
As part of the initiative, the hotel will host a specially curated Sunday Brunch once every month over the next six months, celebrating regional dishes that carry stories of tradition, technique and nostalgia. The first chapter of the brunch series, scheduled for March 15, introduces the rich and soulful flavours of Marwari cuisine from the heart of Rajasthan.
Guests can savour an array of traditional delicacies including Pyaaz Kachori, Kalmi Bada, and the comforting Panchmel Dal, paired perfectly with Bajre Ki Roti. The menu also features Gatte Ki Sabzi, a beloved regional speciality from the Mewar region known for its robust flavours and rustic charm. To conclude the meal on a sweet note, guests can indulge in Ghevar served with Rabdi, alongside Churma for those who enjoy an extra touch of sweetness.
