The Evren’s hospitality offering encompasses elegantly appointed suites, personalised service experiences, a café led by a world champion barista, an intimate speakeasy, and a culinary programme helmed by Culinary Innovation at Nines by The Evren. 

Nines by The Evren is thrilled to showcase a spectacular new menu curated by powerhouse culinary consultant Chef Prachi Mehta. Bringing 13 years of high-octane experience, her stellar global pedigree includes stints at London’s The Wolseley, Copenhagen’s Michelin-starred 108, and a prestigious pop-up at New York’s iconic Eleven Madison Park. Deeply rooted in regional traditions, she also honed her craft at The Bombay Canteen and led innovation as the R&D Chef for Hunger Inc. (Papa’s). For Nines, Chef Prachi has masterfully bridged the gap between sophisticated European fine dining and contemporary Indian flavours, creating technique-driven global dishes that speak a comforting, nostalgic language.

Speaking about the vision behind the property, Harkaran Chawla shares, “The Evren began as an idea of creating something complete — a destination where every detail feels intentional and connected. For over two decades, hospitality maven Suved Lohia has not just built restaurants—he has built feelings. The visionary force behind some of India’s most iconic and beloved hospitality landmarks, including One8 Commune, Neuma, Milagro, Game, and Palacio, Lohia’s

signature is an unwavering obsession with atmosphere, vibe, and the exact emotion a room evokes the moment a guest steps inside.

Geetu Mohnani is a highly acclaimed coffee consultant who made history in 2018 as the first woman to win India’s National Barista Championship. She later went on to showcase her expertise on the global stage, representing the country at the prestigious World Barista 

Championship in Amsterdam. Today, her world-class coffee program is featured at Suenos de Cafe, a chic and contemporary sanctuary nestled within The Evren in Vagator, Goa. Designed as an idyllic, light-filled all-day co-working space, the cafe trades the traditional corporate grind for an inspiring, relaxed atmosphere. NINES, BY THE EVREN 

At the heart of the property sits Nines by Hotel Evren, a premier venture by Anant Hospitality that serves as the estate’s vibrant culinary and social anchor. By day, Nines offers a sophisticated yet relaxed destination, harmonising contemporary European-inspired interiors, curated music, and an all-day menu designed for leisurely lunches, extended brunches, and intimate evening gatherings. The menu curated by Chef Prachi Mehta boasts a stellar lineup of signature dishes, including Balchão Charred Broccoli with coconut feni cashew cream, Kismur Grilled King Prawns, Chettinad Fried Chicken with Goan Poee, Sichuan Pepper Soft Shell Crab, Blue Cheese Cappelletti with walnut sauce, and Bread-Crusted Salmon in Moilee sauce.
