Culinary Culture brings together two of India’s most compelling culinary voices – Spanish Chef Manuel Olveira of La Loca Maria and La Panthera (Mumbai) and Indian Chef Johnson Ebenezer of Farmlore (Bangalore) for a four-hands dinner that explores a fascinating dialogue between two distinct culinary philosophies.
Coming together for the first time on Farmlore’s lush grounds with a shared reverence for the craft, Chef Manuel Olveira and Chef Johnson Ebenezer stand at opposite ends of the creative spectrum.
Chef Manuel Olveira cooks from his Spanish heritage, where the ingredient leads and technique follows – with intent. At La Loca Maria and La Panthera (Mumbai), he channels that philosophy into contemporary expressions of flavour and form: dishes rooted in Spain, refined through Europe, and reimagined in Mumbai. The result: clean lines on the plate, and memorable flavours that land with depth and restrained robustness.
At the helm of Farmlore’s kitchen is Chef Johnson Ebenezer whose philosophy begins not in the kitchen but in the fields. Every meal here starts in the soil, guided by the land and the seasons. Rooted in Indian heritage yet open to interpretation, our cooking reflects a balance between tradition and modernity, where ingredients lead and intuition follows.
